A quick, flavorful one-pan Chicken Mushroom Masala with tender chicken, earthy mushrooms, and a spiced, rich masala sauce—perfect for busy weeknights!
Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups mushrooms, sliced (button or cremini)

1 large onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

2 tomatoes, pureed

1/2 cup plain yogurt

2 tbsp oil (vegetable or canola)

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp coriander powder

1 tsp garam masala

1/2 tsp chili powder (adjust to taste)

Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter for 30 seconds.
- Add the chopped onions and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger. Cook for another minute until fragrant.
- Add the pureed tomatoes and cook until the oil separates, about 5 minutes.
- Mix in the turmeric powder, coriander powder, chili powder, and salt. Stir well.
- Add the chicken pieces and coat them in the masala. Cook for 5-7 minutes until browned.
- Stir in the mushrooms and cook until they release their juices and soften
- Reduce the heat to low and add the yogurt. Stir quickly to combine.
- Add water or broth if needed. Simmer for 10-15 minutes until the chicken is cooked and the sauce thickens.
- Sprinkle with garam masala and garnish with fresh cilantro before serving.
