Description

A quick, flavorful one-pan Chicken Mushroom Masala with tender chicken, earthy mushrooms, and a spiced, rich masala sauce—perfect for busy weeknights!

 

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

  • 2 cups mushrooms, sliced (button or cremini)

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece ginger, grated

  • 2 tomatoes, pureed

  • 1/2 cup plain yogurt

  • 2 tbsp oil (vegetable or canola)

  • 1 tsp cumin seeds

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp garam masala

  • 1/2 tsp chili powder (adjust to taste)

  • Salt to taste

  • Fresh cilantro for garnish

  • Optional: A squeeze of lemon for brightness

  • Optional: 1/2 cup water or chicken broth if the sauce gets too thick


Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter for 30 seconds.
  2. Add the chopped onions and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for another minute until fragrant.
  4. Add the pureed tomatoes and cook until the oil separates, about 5 minutes.
  5. Mix in the turmeric powder, coriander powder, chili powder, and salt. Stir well.
  6. Add the chicken pieces and coat them in the masala. Cook for 5-7 minutes until browned.
  7. Stir in the mushrooms and cook until they release their juices and soften
  8. Reduce the heat to low and add the yogurt. Stir quickly to combine.
  9. Add water or broth if needed. Simmer for 10-15 minutes until the chicken is cooked and the sauce thickens.
  10. Sprinkle with garam masala and garnish with fresh cilantro before serving.

Notes

  • Use room-temperature yogurt to prevent curdling.

  • Add a splash of cream or coconut milk for a richer sauce.

  • Substitute chicken with paneer or tofu for a vegetarian option.

  • Adjust chili powder to your spice preference.
